With all these intolerances, a simple noodle soup goes a long way, especially with the asian rice noodles available! A great winter warmer, this dish can be recreated in so many ways, you’ll never get sick of it. Here is one way to make it:


Time needed: 15 mins
Serves 1

All you’l need:
1/4 cup carrots, grated
5 broccoli stems
1 cup rice noodles
1-2 slice beef, thinly chopped (i used sandwich slices, they are ready made and easy to use)
2 1/2 cups water for noodles
1 cup water for broccoli
1 tsp vegetable powder (GF)
1 tsp salt

This is what you need to do:

1. Wash and cut the broccoli, place in a pot of water. let it cook for approx 5-8 minutes.
2. Meanwhile, in another pot place the noodle in water and let it warm up for 5 minutes, add the salt vegetable powder and stir.
3. Drain the broccoli, and add to the noodle soup. Add the carrots, and stir. Let it cook for 2 minutes and remove from hob.
4. place in a bowl and arrange beef ontop. The heat of the soup will warm the beef up.
