Gluten free? Yes. Wheat free? You got it! I was craving the crunchy texture you get from breaded meat fillets,and came up with the idea of using polenta as a substitute. It turned out amazing, the crispy flavour of the cornmeal combined with the thin turkey steaks was sensational. Gives you the cozy home-cooked mean effect every time.
Time needed: 15 mins
2 turkey steaks ( thinner is better)
1 tbs olive oil
1/2 cup cornmeal ( coarse polenta)
1 tsp pepper
1 tsp salt
1. In a non frying pan pour the oil and allow to heat up on medium fire.
2. Meanwhile, on a plate spread the polenta, salt and , mix it around slightly and place the meat ontop.
3. Flip the meat until all sides are coated with polenta, then place onto the frying pan. Fry untill golden to ensure the meat is cooked. You may lower the fire if you feel the meat needs a bit longer to cook.
4. Place on a plate with a kitchen towel (tissue) to absorb any excess oils that we don’t want on our plates, then serve!
These steaks go great with rice and some spring greens!
