Pesto is an easy way to add flavour to a dish. I love using it in many different ways, from pastas to spreading on rice crackers it adds a refreshing taste and contains nutrient rich ingredients. This gluten and wheat free version can easily be stored and is great on pizza!
Time needed: 5-10 mins
Makes about 2 cups
What you’ll need:
7 cups fresh spinach, washed
1/4 cup water, (add more if too thick)
1 lemon, juiced
1/2 cup pine nuts
3 tbs dried basil, ( or 1 1/2 cups fresh basil)
1/2 tsp pepper
1/2 tsp salt
1. Place all the ingredients in a food processor or blender. Blend untill creamy.
2. Taste test and season accordingly if needed.
Serve or refrigerate.
