A chocolate truffle full of nutrients yet still satisfies your sweet tooth? That is exactly what i’ve come up with. A sugar-free , gluten free and vegan little truffle delight thats bursting with coconut, dates and cocoa powder. A really simple, and easy to make recipe thats perfect for those times when you have company over and need a quick fix dessert serving! It takes 10 minutes to make, and tastes amazing. I’ve added chia seeds to boost the nutritional value and add an energy increasing factor thats perfect for taking with you on the go!
Time needed: 10 minutes
Makes 24 mini truffles
1 1/2 cups pitted dates
3 tbs cocoa powder
2 tbs chia seeds
3 tbs coconut flakes
1/2 cup coconut flakes for rolling
4 tbs water ( add as needed)
1. In a processor, blend the dates first for a few minutes.
2. Then add all the remaining ingredients and process together, adding water if the mixture gets too dry, and alternatively coconut flakes if too wet.
3. Spoon a small amount of the mixture and roll into a ball then dip them into coconut flakes.
4. Refrigerate if not consuming immediately.
