Vegan Strawberry Salad

In my pursuit to capturing new flavours for spring, I’ve combined a few ingredients to deliver this refreshing salad. Bursting with colours, textures and taste  it creates a spring time bliss. Gluten free, wheat free and dairy free by nature its a healthy fix ideal for the warmer weather coming up.

Time needed: 10 mins (not including 20 min prep time)
Serves 2

Salad:
Spinach leaves, freshly washed
1/2 cup pecans, coarsely chopped ( walnuts will also work)
1 cup strawberries, sliced
1-2 lemons, juiced

Method:
1. In a bowl place the sliced strawberries and the lemon juice. Leave to sit for 20 mins. This will allow the lemon juice to thicken naturally.
2. Once thats done, on a serving dish place the spinach leaves and place the strawberries with the lemon sauce over it, finish with the pecans.

You are now ready to serve the salad. It’s bound to stand out on the table!
