A big advocate of lemon juice, this casserole combines the zesty essence brilliantly with the colourful vegetable platter. A hearty yet healthy gluten free dish, it will fill you up without the added calories. Served as a side or a light main dish, you can add any of your favourite ingredients to customize it to your liking. Elegantly easy to make, the vegetable textures melt in your mouth from the first bite.
Time needed: 15 mins
1/2 courgette, diced
1/2 cup broccoli, florets
1 medium carrot, chopped
1/2 onion, chopped
1/4 red bell pepper, chopped
1/4 yellow bell pepper, chopped
1/2 lemon, juiced
1 tbs olive oil
1 tsp vegetable bouillon powder
1/2 cup water
1. In a pot heat up the oil, then place the onions and cook for 3 minutes.
2. Add the carrots stir occasionally, after 1-2 minutes add some water.
3. Add all the vegetables in now, and stir, season accordingly and allow to cook on lower heat for 10 minutes. During this time pour the lemon juice in and stir.
4. Taste test, and season more if needed.
Best served over a bed of rice, it absorbs the lemon sauce amazingly!
Note: If you wish to add meat, you may do so. Just add the meat in after the onions so it cooks well.
