Zucchini Soup

When the cold weather kicks in I personally don’t know a better way to warm up than with a nice bowl of soup. This dish was my way of using the vegetables in my fridge, its versatility is never ending!

What you need:
4 cups water
1 medium sized zucchini (courgette), cut up
1 potato, cut up
2 tbs lemon juice ( or according to taste)
1 tsp ginger powder
1 tbs vegetable bouillon powder ( GF)
1 tsp black pepper
1 tsp salt ( add according to taste)
1/4 onion, coarsely chopped

Method:
1. Chop the potato and zucchini and place in a pot full of water on medium heat.
2. Put the vegetable powder, ginger powder, salt and pepper.
3. LEt it cook for 10-15 minutes, or until you’ve checked the potatoes have softened.
5. Finally put the lemon juice and add seasoning as necessary then place in a food processor to give it the creamy texture.

Voila! Your soup is served. Hope it brings warmth to your appetite!
